Whipping up one of my go-to weeknight dinners! Coconut & veggie curry! This dish is a total winner, it’s quick, easy, and packed with loads of bright, colourful veggies, healthy fats & plant-based protein. Not only is it nutrient-rich and bursting with flavour, but it’s also super versatile – I love making it vegan, but you can easily add chicken if that’s your jam.
This curry is proof that healthy eating doesn’t have to be complicated. It’s all about nourishing your body with delicious, wholesome ingredients that make you feel amazing. Ready to spice up your dinner routine? This one’s a must-try!Serves: 4 // Cook time: 20 mins
Ingredients:
1 cup basmati (raw), 3 cups cooked
2 tbsp coconut oil
4 garlic cloves, crushed
1 inch, ginger, grated
2 tbsp curry powder
1 tsp ground turmeric
1 tsp garamasala
1 tsp salt
2 400g cans light coconut milk
600g of lean protein (organic firm tofu/tempeh/ chicken)
8 cups chopped mixed stir-fry vegetables*
1 lemon, quartered, for serving
Optional, fresh coriander leaves for servingHow to:
1. Cook rice, as per packet instructions.
2. In a large pot, heat coconut oil on medium heat, add garlic & ginger and cook for 1-2 minutes.
3. Add the lean protein to the pan of ginger & garlic and sauté for 3 -5 minutes, until browned.
4. Add curry powder, turmeric & garamasala and toast for 30 seconds.
5. Add the coconut milk, chopped vegetables & salt. Bring to a boil then reduce heat to low and cook for 10 minutes, until vegetables are cooked.
6. Serve with basmati rice, a squeeze of lemon & optional sprinkle of fresh coriander leaves. Enjoy!
